A perfect do-ahead breakfast. Make them on Sunday; freeze; then you have breakfast for the kids all week long – just pop in the microwave to reheat when needed. They are also great sandwiched between mini-bagels. After microwaving, put one ‘muffin’ between the bagel halves, wrap in foil and enjoy it at the bus stop – perfect when those extra minutes of sleep take the place of a sit-down breakfast.
Ingredients
½ pound turkey sausage
12 eggs
½ cup chopped onions
½ cup chopped green peppers
½ tsp. salt
¼ tsp. pepper
¼ tsp. garlic powder
½ cup (or more) shredded sharp Cheddar cheese
Directions
Brown sausage; drain well.
Preheat oven to 350˚.
In a bowl, beat eggs. Add onion, green peppers, salt, pepper and garlic powder.
Stir in sausage and cheese.
Spoon 1/3 cupfuls into paper lined or ‘sprayed’ muffin cups.
Bake for 20 -25 minutes or until a knife inserted comes out clean.
Enjoy right away or cool on wire racks, wrap individually and reheat in the microwave at a later time. Microwaves heat differently – start with 1 minute per muffin to see how long they take in your kitchen.
