MAPLE-NUT CHIFFON CAKE

Ingredients

2 ½ cups cake flour
¾ cup granulated sugar
¾ cup dark brown sugar
3 teaspoons baking powder (1 tablespoon)
¾ teaspoon salt
½ cup salad oil
5 egg yolks plus 2 whole eggs
¾ cup cold water
2 teaspoons maple flavoring
5 egg whites
½ teaspoon cream of tarter
1 cup finely chopped walnuts

Directions

Golden Butter Frosting
1 stick butter, melted
4 cups Confectioners’ sugar
1 tablespoon maple flavoring
1/3-1/2 cup light cream
Additional chopped walnuts for garnish*
Combine butter, powdered sugar and flavoring. Blend in cream to get the desired consistency. Brush crumbs from cake and spread with a thin coating layer – refrigerate. After ten minutes frost entire cake (top, sides and funnel hole). Garnish with additional chopped nuts and two or three small real maple tree leaves (washed). *A 6 oz. bag of chopped walnuts was used for the entire cake (the batter and the garnish).
