Baked Eggs With Italian Cheese

Ingredients

  • 6 eggs
  • 6 tbsp. Parmesan or Romano cheese
  • salt and freshly ground black pepper
  • 2 tbsp. butter
  • 3 tbsp. Ham, cut into thin matchsticks
  • 3-4 leaves fresh basil, to garnish
  • Rounds of crusty bread, warmed

Directions

Preheat oven to 400 degrees. Grease shallow ovenproof dish (or dishes). Break eggs into the dish. Season with salt and pepper. Sprinkle ham over the whites. Sprinkle the top with the cheese. Dot with butter. Cover the dish, and bake for 7-10, or until the eggs have cooked and the cheese has melted. Garnish with basil. Serve hot with warmed bread. Serves 3 large or 6 small servings
