1 1/2 cups self-rising flour
1/4 cup sugar, divided
1/2 teaspoon ground nutmeg
1/2 teaspoon ground coriander
1/2 teaspoon ground allspice
1/2 cup milk
1/3 cup butter, melted
1 teaspoon ground cinnamon
1/4 cup butter melted
1. Preheat oven to 400 degrees F. Grease muffin pans.
2. Combine flour, 1/2 cup sugar, nutmeg, coriander, and allspice in a
large bowl. Combine milk, butter, and egg in small bowl; stir into
flour mixture just until moistened. Spoon evenly into prepared muffin cups.
3. Bake 10 - 13 minutes or until edges are lightly browned and
toothpick inserted in center comes out clean. Remove from pan.
4. Meanwhile, combine remaining 1/4 cup sugar and cinnamon in shallow
dish. Dip warm muffin tops in remaining 1/4 cup melted butter, then in
sugar-cinnamon mixture. Serve warm.
Makes 12 muffins or 36 mini-muffins.
