- 16 Roma Tomatoes
- 2 Cucumbers Seeded & Diced Small
- 1/2 Red Onion Diced
- 1 Hot Pepper
- 2 Cloves Garlic
- 1/2 Bunch Cilantro
- 4 tsp Kosher Salt
- 1 Tbl Black Pepper
- 1 Lime Juiced and Zested
1: Begin by pureeing in a blender or food processor four tomatoes, hot pepper, and garlic.
2: Dice remaining tomatoes and put into large bowl.
3: Add cucumbers, red onion, tomato puree, lime juice, salt, and pepper.
4: Chop fine lime zest and cilantro. Add to mix.
5: Toss everything together and coat well.
6: Refrigerate until ready to serve.
