Mediterranean Pasta

Ingredients

Tuscan Salsa



  • 12 oz. sun dried tomatoes
  • 1 cup capers
  • 2 jars roasted red peppers
  • 1/2 cup toasted pine nuts
  • 1/2 –1 Tbsp. roasted garlic
  • 1/2 cup olive oil
  • 1 jar pitted kalawiata olives



    Pasta



  • 8 oz. cooked pasta
  • 4 green onions
  • 1/4 cup feta cheese
  • 4 oz. cooked chicken
  • Dry vermouth

    Directions

    Per Person



    1. Combine all of the Tuscan salsa ingredients.



    2. Saute 1/2 cup of Tuscan salsa.



    3. Add 1/4 cup dry vermouth and chicken breast.



    4. Add green onions and top with feta cheese.
