Lemon Cheese Cake

Ingredients

  • 3/4 cup butter
  • 2 cups sugar
  • 1 cup milk
  • 3 1/2 cups flour
  • 3 1/2 tsp. baking powder
  • 1 tsp. lemon extract
  • 6 egg whites



    Filling



  • 6 egg yolks
  • 1 cup sugar
  • 1 cup butter
  • Juice and rind of three lemons

    Directions

    1. Cream butter and sugar. Sift together flour and baking powder three times.



    2. Add to butter with milk and flavorings. Fold in beaten egg whites.



    3. Bake in layers at 375° for 35 minutes.



    4. For the filling, mix all ingredients and cook in double boiler until thick, then spread on cake.
