Mini Frittatas With Ham and Cheese

Ingredients

  • Cooking spray
  • 1/2 c. finely chopped onion
  • 2/3 c. chopped reduced-fat ham (about 2 oz.)
  • 1/3 c. shredded reduced-fat extra sharp cheddar cheese
  • 2 T. chopped fresh chives
  • 1/8 tsp. dried thyme
  • 1/8 tsp. black pepper
  • 4 large egg whites (or 4oz. egg substitute)
  • 1 large egg

    Directions

    1. Bake these bite-size frittatas in a miniature muffin pan. They taste great at room temperature, so you can make them in advance.



    2. Heat oven to 350 degrees. Heat a large non-stick skillet, coated with cooking spray, over medium-high heat.



    3. Add onion and saute for 2 minutes or until crisp tender. Add ham and saute 3 minutes. Remove from heat. Cool 5 minutes. Combine remaining ingredients in a large bowl and stir with a whisk. Add ham mixture and stir.



    4. Spoon mixture into 24 miniature muffin cups coated with cooking spray or margarine. Bake for 15 minutes or until set.
