Mandarin Chicken

Ingredients

  • 4 skinless chicken breasts
  • vegetable cooking spray
  • 1 - 11oz. can mandarin oranges, undrained
  • 2 T. brown sugar
  • 3 T. catsup
  • 1 T. vinegar
  • 1 tsp. cornstarch
  • 1/2 tsp. cinnamon
  • 1/8 tsp. cloves
  • 1 tsp. mustard

    Directions

    1. Brown chicken, cut in small pieces or left whole, for 2 - 3 minutes in large skillet with cooking spray.



    2. Mix juice from oranges and the rest of the ingredients and pour over the chicken. Save oranges for later.



    3. Cover and simmer 30 minutes. Add oranges to chicken and simmer for 5 minutes. Makes 4 servings.
