Broccoli and Carrots with Oranges
1 sheet heavy-duty aluminum foil
1/2 c. orange marmalade
1/2 tsp. salt
4 c. broccoli florets
1 1/2 c. baby carrots
1 can mandarin oranges/ drained
1/3 c. cashews
1. Heat oven to 450 degrees. Combine orange marmalade and salt. Add broccoli and carrots; toss to coat.
2. Center vegetable mixture on sheet of foil. Add mandarin oranges. Seal foil edges, making a packet, but leave room for heat circulation inside.
3. Bake 25 - 30 minutes on a baking sheet or dish in oven. Sprinkle with cashews before serving.
