Ingredients

  • 1 tsp. margarine
  • 6 eggs, beaten
  • large handful of crushed corn tortilla chips
  • 1/2 c. shredded cheddar cheese
  • salsa to taste

    Directions

    1. Melt margarine in a non-stick skillet over medium-high heat. Pour beaten eggs into hot skillet.



    2. Toss in the crushed tortilla chips, or crumbs, and gently move eggs around the bottom and sides of pan with an inverted pancake turner. When eggs are no longer runny, add the cheese and heat until lightly melted.



    3. Serve with salsa.



    Serves 3 - 6
