Ingredients

  • 1 cup chopped cucumber (with peel)
  • 1 can (8 3/4 oz.) corn, drained
  • 1 can (16 oz.) stewed tomatoes
  • 2 T. chopped red pepper
  • 2 T. chopped green pepper
  • 2 T. red wine vinegar
  • 1/2 tsp. garlic
  • 1/2 tsp. cumin
  • 1/4 tsp. dried cilantro
  • 1/4 tsp. salt (optional)
  • 1/8 tsp. ground pepper

    Directions

    1. Combine ingredients and mix well. Serve cold.



    One serving is 1/2 cup
