Black Bean Salsa

Ingredients

  • 1/3 c. finely chopped red bell pepper
  • 1/4 c. finely chopped red onion
  • 1/4 c. chopped cucumber
  • 1/4 c. diced plum tomato
  • 2 T. chopped celery
  • 2 T. chopped seeded jalapeno pepper
  • 1 T. chopped fresh basil
  • 2 T. olive oil
  • 2 T. balsalmic vinegar
  • 1 T. fresh lime juice
  • 1 1/2 tsp. minced fresh or 1/2 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/2 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 1/4 tsp. black pepper
  • 3 garlic cloves, minced
  • 2 (15-ounce) cans black beans, rinsed and drained

    Directions

    Combine all ingredients in a medium bowl; stir well. Cover and chill for 2 hours.



    Yield: 16 servings
