1 jar (48 oz.) black or pinto beans, rinsed and drained
1 c. salsa
1/2 tsp. cumin or chili powder
3 green onions, chopped
2 c. shredded lettuce
1 green pepper, seeded and chopped
2 tomatoes, chopped
4 oz. reduced-fat shredded cheddar cheese
15 slices black olives (optional)
1 lg. bag baked tortilla chips
1. Place black beans or pinto beans, salsa, and cumin or chili powder in a food processor and blend thoroughly.
2. Spread this mixture across a large decorative serving platter. Layer on the following ingredients in this order: green onions, shredded lettuce, green pepper, tomatoes, cheese and olives. Open the chips and enjoy!
Serves 16 as an appetizer, 4 as a meal.
