1/2 cup chopped onions
1 Tbsp. olive oil
1/2 pkg. frozen peas and carrots, thawed
1 cup frozen baby shrimp, (or chicken, pork or beef) thawed
2 cups cooked rice
4 to 6 eggs, blended
Lite soy sauce, to taste
1. Saute onions in olive oil until crisp tender.
2. Add peas and carrots and shrimp and rice.
3. Pour on beaten eggs and scramble until thoroughly cooked.
4. Season with soy sauce and serve hot.
