Cheesy Tuna Quesadillas


  • 4 whole-wheat wraps or whole-wheat tortillas (10" diameter)
  • 2 cups fresh broccoli flowerets
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 1 can (6 oz.) water packed chunk white tuna, drained
  • 6 oz. shredded, reduced-fat Cheddar Cheese


Steam broccoli until tender (not mushy). Chop into small pieces. Mix together the celery, onion, and tuna. Add the broccoli. Spoon 1/4 of the mixture onto half of each tortilla. Sprinkle with cheese. Fold each tortilla over and sprinkle with remaining cheese. Microwave each quesadilla on high for one minute. Cut into quarters before serving. These are delicious by themselves or served with low-fat sour cream.
