Chocolate Stuffed French Toast



  • 1 loaf (12 oz.) Italian bread, about 15" long and 4" in diameter
  • 1/2 cup chocolate chips
  • 4 eggs, beaten
  • 1-cup skim or low-fat milk
  • 1/2 teaspoon vanilla (opt.)
  • 1 Tablespoon margarine
  • Confectioner's sugar, fresh sliced berries or syrup


Cut loaf of bread into 8 slices, each about 1 1/2" thick. Cut almost, but not quite, through each slice to make a deep pocket. Sprinkle 1 tablespoon of chocolate chips in each pocket- press to close. In a bowl, beat together eggs, milk and vanilla until well blended.

Melt margarine in non-stick coated skillet or griddle. Dip both sides of each slice into egg mixture and place in greased skillet. Cook on medium heat until golden brown, turn and cook until golden brown on other side (make sure to cook thoroughly).

Each slice should be thoroughly toasted on each side. *Optional cooking technique: These can be baked on a greased cookie sheet in a 350-degree oven for 30-35 minutes. Serve, sprinkled with powdered sugar, with either sliced berries or syrup. Makes 8 slices.
