Welsh Rarebit

Ingredients

  • 1 Tbsp. butter
  • 1 cup beer
  • 3 cup shredded cheddar cheese
  • 1 large egg, lightly beaten
  • 1 tsp. Worcestershire sauce
  • 1 tsp. salt
  • 1/2 tsp. sweet paprika
  • 1/4 tsp. dry mustard
  • 1/4 tsp. cayenne pepper
  • Your favorite toasted bread
  • Bacon bits
  • 1 tomato, chopped

    Directions

    1. In a double boiler melt butter, then add beer.



    2. Heat, then add cheese and stir until mixture is thoroughly melted. Stir in the rest of ingredients and cook for one more minute.



    3. Serve at once over your favorite toasted bread and top with bacon bits and chopped tomato.



    Yield: 3 to 4 people
