Roxanne's Olive Potato Salad

Ingredients

  • 8 medium white potatoes, boiled and sliced
  • 1 cup sliced green olives
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup chopped green onions
  • 1/2 to 1 Tbsp. of Beau Monde seasoning
  • Black pepper to taste

    Directions

    1. After boiling and slicing the potatoes, set aside until cooled.



    2. Combine olives, mayonnaise, sour cream, green onions and seasoning and mix with cooled potatoes.



    3. Mix until potatoes are thoroughly coated and chill in refrigerator for several hours or overnight.
