Oatmeal Muffins with Fruit

Ingredients

  • 1 ¼ Cup oatmeal
  • 1 Cup flour (1/2 whole wheat, 1/2 white)
  • 1/3 Cup brown sugar
  • 1 Tbsp. baking powder
  • 1 Tsp. cinnamon
  • 1 Banana, mashed
  • 1 Small apple, grated
  • 2 Tbsp. raisins or other dried fruit
  • ¼ Cup egg substitute
  • 1 ¼ Cup skim milk
  • 2 Tbsp. canola oil

    Directions

    Preheat oven to 400 F. Mix all the ingredients just until moistened. Pour into muffin tins that have been sprayed with non-stick coating. Bake for about 20-25 minutes or until golden brown.



    Yield: 12 muffins


    Calories: (1 muffin) = 140 calories

    Fat = 4 g
