Ingredients
1 ¼ Cup oatmeal
1 Cup flour (1/2 whole wheat, 1/2 white)
1/3 Cup brown sugar
1 Tbsp. baking powder
1 Tsp. cinnamon
1 Banana, mashed
1 Small apple, grated
2 Tbsp. raisins or other dried fruit
¼ Cup egg substitute
1 ¼ Cup skim milk
2 Tbsp. canola oil
Directions
Preheat oven to 400 F. Mix all the ingredients just until moistened. Pour into muffin tins that have been sprayed with non-stick coating. Bake for about 20-25 minutes or until golden brown.
Yield: 12 muffins
