Chicken and Shrimp Brochette With Peanut Sauce

Ingredients

  • ½ Cup unsalted peanut butter
  • 2 Tbsp low sodium soy sauce
  • 1/3 Cup cilantro, chopped
  • 4 garlic cloves, minced
  • 1Tbsp ginger root, minced
  • 1 lemon, the juice of
  • 1 Tbsp red pepper flakes
  • ½ Cup water, or more as desired
  • 1 Tsp cayenne pepper
  • 1 Tsp fish sauce
  • 12 Ounces skinless boneless chicken breast, cut into strips
  • 12 Ounces shrimp, peeled and deveined

    Directions

    If using wooden skewers, soak them in water for at least 30 minutes. Alternately place the shrimp and chicken onto the skewers.



    To make the sauce, combine all remaining ingredients in a food processor or blender and process until almost smooth. Take half the sauce and marinate the skewered meats in the sauce for 1 to 2 hours.



    For best flavor grill the skewers over an open fire (you may also broil in an oven) until the chicken is just cooked through – about 2 to 3 minutes per side.



    Serve with the remaining peanut sauce on the side.
