1 10 oz. pkg. frozen chopped spinach, cooked and drained
½ cup plain low-fat yogurt
½ cup egg substitute
¼ cup Parmesan cheese, grated
2 Tbsp. margarine, melted
1 Tbsp. onion, pared and grated
1. Preheat oven to 350 F.
2. Squeeze spinach well to remove excess water.
3. Combine all ingredients and mix well.
4. Pour into greased casserole.
5. Bake at 350 F for 25 to 30 minutes. Can also be cooked in microwave oven for
8 minutes on high.
This recipe can be assembled the day before and stored in the refrigerator until ready to bake. When serving guests, try doubling or tripling the recipe.
