Cucumber Melon Soup With Mint
From Calhoun's, WHSV's News At Noon, June 7.
Ingredients
- 2 cucumbers, seeded and cut into chunks
- 1/2 Honeydew melon, seeded and cut into chunks
- 6-8 leaves fresh mint
- 1 8 oz. container plain yogurt
- Juice of 2 limes
- 1/2 tsp. hot sauce
- Salt & white pepper to taste
Directions
1.) Combine cucumbers, melon, mint, hot sauce, lime juice, and yogurt in food processor or blender.
2.) Puree until desired consistency.
3.) Season to taste.
4.) Chill for 30 minutes.
5.) Serve cold, garnished with fresh sprigs of mint.
