- 4 eggs
- 1 tablespoon Zesty Italian dressing mix (dry)
- 2 teaspoons chives
- ¼ cup cream cheese (fat free is fine)
Whip eggs, chives and dressing mix in a bowl. Cube cream cheese and add to egg mixture. Cook in a skillet with just enough butter not to stick, over medium heat, stirring gently until eggs are set. Do not overcook. Chill thoroughly. Serve on crackers, cucumber slices or zucchini for a tasty appetizer. Makes 16 appetizer portions.
