Directions1. In a large bowl, mix all ingredients together, except tomatoes. Cover mixture and chill for 1 hour.
2. Spread tomatoes open like a flower on serving plates. Drizzle a little olive oil over tomato flesh. Sprinkle tomatoes with salt and pepper.
3. Mound shrimp salad inside tomato being careful not to tear tomato apart.
4. Top with chopped chives.
