Chicken with Raspberry Salad


  • 4 oz. chicken breast
  • 4 cups chopped romaine lettuce
  • 1/2 cup shredded carrots
  • 1/2 pint fresh raspberries or strawberries (optional)
  • 1/4 cup sliced almonds
  • 3 thin slices red onion
  • Raspberry vinaigrette

  • Directions

    1. Place cut romaine, shredded carrots and sliced almonds in a bowl. Add raspberry vinaigrette to taste.

    2. Place salad on plate; top with fresh raspberries, thin slices of red onion and finish with sliced chicken breast.

    3. Use extra dressing to taste.
