The Czar's Bag of Rubles

  • 6 - 8 oz. cut of pork loin, pounded thin
  • 1 recipe of your favorite stuffing, forcemeat, duxelle, or salpicon
  • Olive oil or mayonnaise
  • Butcher's twine or cheese cloth

    The Flower of Russia

  • One 6” cut of pork loin
  • One pineapple, cored and sliced
  • Yogurt

    The Czar's Bag of Rubles

    1. Place filling on flattened pork loin, then draw pork over filling and tie with butcher's twine or cheese cloth.

    2. Roast in oven until pork reaches a temperature of 140 degrees.

    The Flower of Russia

    1. Slice the pork loin into 6 - 7 slices, but leave one side of loin still attached to the slices.

    2. Fan the slices out in a circle and pound gently with a mallet to form the flower petals.

    3. Place pineapple slices under the petals.

    4. Season the pork in your favorite style.

    5. Brush the top of the petals (the edges) with yogurt to brown.

    6. Roast in the oven until the pork reaches 140 degrees.
