Avocado Cream of Mushroom Soup


* 2 avocados, peeled and pitted

* 1 clove garlic

* 2 cups hot Chicken Stock

* 1 Tbsp Olive Oil

* 1 cup, sliced Mushroom

* 1 red pepper, diced

* 1/4 small yellow onion, finely minced


In a food processor or high-powered blender, blend avocado, and stock. Set aside.

Heat olive oil in a medium sauce pan

Sauté mushrooms, red pepper, onion until they begin to soften. Add garlic and brown.

Add avocado mixture and heat through
