8 slices bread
4 slices ham
4 slices gruyere cheese
4 eggs, slightly beaten
2 tablespoons water
Salt and freshly ground black pepper
4 poached eggs
DirectionsSpread bread with butter and make four sandwiches, each with ham and cheese. Press firmly together. Some like to remove crusts.
Combine beaten eggs with water; add salt and pepper; and dip the sandwiches into the egg mixture, coating all sides well.
Heat a bit of butter in a heavy-bottomed skillet, and when very hot (but not brown); fry the sandwiches for about 5 – 8 minutes, turning once.
Slice each sandwich in half, arrange artfully on plate and top with a poached egg. Serve with oranges slices, strawberries and Blackberry jam for dipping.
For a crowd – make the sandwiches, dip in egg batter and place on a well-buttered baking pan and bake in a 350° oven. Bake, turning once, for about 10 – 15 min.
