Puff Pastry Tarts




Ingredients

Store bought puff pastries
Heavy Cream
Vanilla Pudding Mix
Store bought frozen berry mix

Directions

Crust:
Let the dough come to room temperature, around 30 minutes. Lightly flour a cutting board and place your dough on it. Take the 2inch cookie cutter and press out 2 circles. Take 1 circle and use the 1 inch cookie cutter to cut a hole out of the center. Make an egg wash with 1 egg and 1 tsp of water and whisk like a scrambled egg! Use a pastry brush to lightly brush the brim of the base circle with egg wash and then attach the outer layer to the base, like shown in the video. Brush the top of the puff pastry with egg wash and sprinkle with sugar. Place on a parchment papered cookie sheet and bake at 400 for 10 minutes or until the top is golden brown! Take out of oven and use a spoon to push down the center to make a hole for the cream! Let cool on wire racks for 20 minutes.

Cream:
Pour 2 cups of heavy cream into a stand mixer or (hand mixer) and pour 3 tbsp's of pudding mix into the heavy cream and let it dissolve! Beat the cream at medium speed for 3 - 4 minutes until it becomes smooth but not chunky, if you went to far with the cream, it's no big deal just all a little more heavy cream and it will smoothen out. Place in refrigerator for 10 minutes.

Berries:
Measure out 1 cup of berry mix into a bowl and add 1/4 cup of granulated sugar and mix thoroughly. Keep at room temperature for 1 hour or until the nature sugars come out of the berries and it becomes syrupy.
