Spiced French Toast with Maple Syrup Apples


French Toast:
6 Eggs
1 1/2 Cups Milk
2 Tbsp. Sugar
2 Tsp. Vanilla Extract
Spice mix (see below)
1 Tbsp. Vegetable oil
10 slices (3/4" thick) French loaf or egg bread

Spice Mix:
1 1/2 Tsp. Ground Cinnamon
1/2 Tsp. Ground Cardamom
1/4 Tsp. Ground Nutmeg
1/4 Tsp. Ground Ginger
1/8 Tsp. Ground Cloves

Maple Syrup Apples:
1 Tbsp. Butter
4 Cups peeled, sliced Apples
1/2 Cup Maple Syrup


In a large bowl, whisk together eggs, milk, sugar and vanilla. Whisk in the spice mix until well blended.

Heat some of the oil in a large non-stick skillet over medium heat; brush pan to spread evenly.

Dip bread, a few slices at a time, in the egg mixture; place in skillet.

Cook about 2 minutes; flip and cook until golden brown, 1 to 2 minutes. (Be certain to cook long enough for all egg batter to be thoroughly cooked. Longer cooking at a lower temperature will ensure that.)

Remove to a large plate cover with foil to keep warm; cook remaining slices, adding a bit of oil to skillet as necessary.

Serve with warm Maple Syrup Apples.

Makes 4 or 5 servings

Maple Syrup Apples:
Melt butter in a large non-stick skillet over medium heat; add apples; reduce heat to medium-low; cover and cook 3 minutes.

Stir in maple syrup.

Cook apples, stirring occasionally, until tender, about 2 minutes.
